Dubuque, Iowa (May 5, 2014) – After an extensive search for new chefs to lead the culinary team of Caroline’s Restaurant and Hotel Julien Dubuque in Dubuque, Iowa, the hotel’s management team plucked two candidates from the hotel’s own pool of talent to fill the positions. Lisa Smith has been named Executive Chef and Tom Zeimet has been named Executive Sous Chef.
Smith’s culinary prowess reflects time spent in the Midwest and the Hawaiian Islands honing her skills. She returned to her home state of Iowa in 2010 to serve as a banquet cook and then Executive Sous Chef at Hotel Julien Dubuque, making this promotion to Executive Chef a seamless one. She will be rolling out a new seasonal menu later this month and is revamping the wedding banquet menu as well. Smith trained at Le Cordon Bleu, Minneapolis.
Zeimet will oversee the day-to-day food production in his new role as Executive Sous Chef, a promotion from banquet cook. Prior to joining Caroline’s Restaurant earlier this year, Zeimet led the culinary team at one of the busiest catering firms in northern Illinois, and before that he worked at an acclaimed inn and restaurant in Galena, Ill.
According to Hotel Julien Dubuque General Manager Dwight Hopfauf, the search for culinary leadership was an extensive one. “We reviewed many, many resumes, held phone and in-person interviews, and conducted tastings,” said Hopfauf. “Given that careful process, it was gratifying to realize the talent was right here and that we could promote from within to fill these two key positions.”
Caroline’s Restaurant serves a menu described as American cuisine with a twist. It is open for breakfast, lunch and dinner, and is famous in the city for its holiday and special occasion brunches served in the hotel’s beautifully restored Grande Ballroom. Caroline’s also has private dining areas suitable for business meetings, and a full catering menu. The restaurant is named for Caroline (Rhomberg) Fischer, great-great-grandmother of the three cousins who today manage the Fischer Companies and the Hotel Julien Dubuque. According to family archives, Caroline Fischer was considered a driving force in the community and businesswoman much ahead of her time.
